<p>This is the first in a quick series of leftover turkey recipes aimed at giving you some of the best possible leftover turkey meals you have ever tried! <p>As I am writing this I wonder what everyone else does with the leftovers. So, I have a challenge for the readers that can benefit all of us. It&#8217;s time for the <strong>Thanksgiving Leftover Turkey Challenge</strong>: just how many ways can a leftover turkey be used?  Share your ideas and recipes with us. Use the comments to tell us <em>what you do with the leftover turkey after Thanksgiving</em>!</p>
<p>While leftovers are a wonderful, thrifty thing, sometimes their sheer abundance can be a little overwhelming. So, what do you do with them?</p>
<p>Here is one suggestion, make this easy turkey pot pie.</p>

<h3>Easiest Turkey Pot-Pie</h3>
<p>Our first recipe aimed at using up all that leftover Thanksgiving turkey is the Easiest Turkey Pot Pie. This pot-pie is very easy to make and results in a dinner the whole family will love.</p>
<p><strong>note</strong> &#8211; If you don&#8217;t have frozen soup vegetables, regular mixed vegetables are fine as a substitution.</p>
<h3>Ingredients:</h3>
<ul>
<li>2 cups chopped cooked turkey</li>
<li>1 16-oz pkg frozen soup vegetables</li>
<li>1 12-oz jar turkey gravy</li>
<li>1/4 cup water</li>
<li>2 refrigerated pie crusts</li>
</ul>
<h3>Preparation:</h3>
<ol>
<li>Preheat oven to 400 degrees.</li>
<li>Combine turkey, vegetables, gravy and water in a mixing bowl. Set aside.</li>
<li>Place one of the pie crusts in a 9-inch pie pan.</li>
<li>Add the turkey mixture.</li>
<li>Place the remaining pie crust on top.</li>
<li>Seal the edges of the pie crusts.</li>
<li>Cut slits in the top pie crust to vent.</li>
<li>Bake in the oven for 1 hour, until crust is golden and filling is bubbly.</li>
</ol>

<h3>Ingredients:</h3>
<ul>
<li>1 tablespoon vegetable oil</li>
<li>1 medium onion chopped</li>
<li>2 1/2 cups leftover cooked turkey (shredded)</li>
<li>1 (7 oz.) can diced green chiles</li>
<li>1 package (1.25 oz.) taco seasoning mix</li>
<li>8 corn tortillas</li>
<li>1 (15 oz.) can kidney beans drained</li>
<li>2 cups (8 oz.) shredded cheddar cheese divided</li>
<li>16 oz. salsa</li>
</ul>
<h3>Directions:</h3>
<ol>
<li>Grease 13x9x2-inch baking dish.</li>
<li>Heat oil in large skillet.  Cook onion, stirring occasionally, until tender.  Remove from heat.  Stir in chicken, chiles and seasoning mix.</li>
<li>Layer half of tortillas in prepared baking dish. Top with chicken mixture, beans and 1 cup cheese.  Layer with remaining tortillas.  Top with salsa and remaining cheese.</li>
<li>Bake for 30 to 35 minutes @  350°F or until heated through and cheese is melted.</li>
</ol>
<p>This recipe is also very good made with leftover beef or leftover chicken instead of leftover turkey.</p>

<p>Here is a delicious, healthy and filling recipe for fajitas that will make the best use of leftover turkey, chicken, or beef.  I just made it last night and it is wonderful!</p>
<p><strong>total time</strong>: 65 Minutes</p>
<h3>Ingredients</h3>
<ul>
<li>3 Leftover chicken breast fillets, leftover turkey, or leftover beef [steak] (cut into strips)</li>
<li>1 green pepper (cut into strips)</li>
<li>1 red pepper (cut into strips</li>
<li>8 &#8211; 8&#8243; Flour Tortillas</li>
</ul>
<h3>Marinade:</h3>
<ul>
<li> 1 lime</li>
<li>1/2 tsp salt</li>
<li>1/2 tsp pepper</li>
<li>1/2 tsp cumin</li>
<li>1/2 tsp chili powder</li>
<li>1/2 tsp cilantro</li>
</ul>
<h3>Toppings: (your choice)</h3>
<ul>
<li> Guacamole</li>
<li>Sour Cream</li>
<li>Salsa</li>
<li>Corn</li>
<li>Shredded Cheddar Cheese</li>
<li>Chopped Lettuce</li>
<li>Tomatoes</li>
<li>Refried Beans</li>
</ul>
<h3>Directions</h3>
<ol>
<li>Mix together marinade ingredients. Add the thin strips of meat and marinate for minimum of 30 minutes to maximum of overnight).</li>
<li>Saute peppers in 1 Tbl of canola oil. Add onion slices. Remove peppers and onions when soft and set aside. Add meat to pan (add more oil if necessary). Cook until warm (approx 5 minutes and add peppers. Cook for a few minutes more and serve.  While meat mix is cooking, prepare the toppings in individual bowls for serving. Warm up tortillas in a tortilla warmer, or individually in the microwave on a paper towel for 15 seconds each.</li>
<li>Place fajita mixture in the tortilla. Let each person add their own toppings and wrap tightly.</li>
</ol>
<p>Number of Servings: 8</p>

<li><span style="font-family: georgia;"> Mix all ingredients in a large nonstick skillet; press down with back of a broad spatula. Place over medium-high heat.</span></li>
<li><span style="font-family: georgia;"> Cook, stirring occasionally, 14 to 16 minutes until liquid evaporates and some crustiness forms on bottom.</span></li>
<li><span style="font-family: georgia;">Turn in sections with the spatula; cook 2 minutes more.</span></li>

<li>Cook peppers &amp; onions till tender, set aside.</li>
<li>Cut turkey into strips and brown in a frying pan.</li>
<li>Mix water with seasoning (follow that instructions).</li>
<li>Then add veggies. Add mixture to tortilla’s. Cheese, salsa, sour cream is all optional.</li>

<li> 4 cups diced leftover cooked turkey meat</li>
<li> 3/4 cup purchased fresh fire-roasted salsa</li>
<li> 1 tablespoon ground cumin</li>
<li> 1 8-ounce package grated Mexican 4-cheese blend (about 2 cups)</li>
<li> 3/4 cup chopped fresh cilantro</li>
<li>6 burrito-size flour tortillas</li>
</ul>

<h2>Preparation</h2>
<p>Preheat oven to 300°F. Heat oil in large nonstick skillet over<br />
medium-high heat. Add onions and bell peppers; sauté until tender and<br />
golden, about 15 minutes. Add turkey, salsa, and cumin; stir until<br />
heated through, about 5 minutes. Stir in cheese and cilantro; season<br />
generously with salt and pepper. Remove from heat; cover to keep warm.</p>
<p>Working with 1 tortilla at a time, heat tortilla directly over<br />
medium-high gas flame (or in dry skillet over medium-high heat) until<br />
warm, softened, and browned in spots, about 30 seconds per side. Place<br />
tortilla on work surface. Spoon 1 cup warm turkey mixture along center<br />
of tortilla; fold sides in over filling, then roll up tortilla to<br />
enclose filling. Place burrito seam side down on baking sheet, and<br />
place in oven to keep warm. Repeat with remaining tortillas and<br />
filling.</p>
