This recipe is great for any leftover beef (steak, roast, etc.). It tastes great and is easy on the budget!
Ingredients:
- 2 c. thinly sliced cooked beef
- 2 tbsp. soy sauce
- 2 tsp. cornstarch
- 3 tsp. dry sherry
- 1/2 tsp. sugar
- 1 lg. onion, sliced
- 6 tbsp. cooking oil
- 2 green pepper, sliced
- 1/4 c. chicken broth
- 4 c. cooked rice
Preparation:
- Cut the leftover beef into thin strips.
- Combine meat, 1 tablespoon soy sauce, cornstarch, sherry and sugar in a small bowl. Marinate 10-15 minutes.
- Meanwhile, saute onion in 2 tablespoons of oil in a large skillet for 3 minutes until crisp tender. Add green pepper, saute 1 minutes. Add meat and marinade, chicken broth, and remaining 1 tablespoon soy sauce. Saute 1 minute.
- Transfer meat to warm bowl and heat remaining 4 tablespoons oil and fry rice. Add meat mixture and top with chopped green onion. Serve.
- Salt and pepper to taste.

Sounds a great recipe. I am always a bit boring and just make sandwiches, this seems like a much better idea.
Leftover fish (either fried, smoked or steamed) is also a great mix with fried rice, then add chopped scrambled eggs.
